June’s No Bake Cheesecake For Two

Here at The Kitchen Depot, our resident Queen of the Kitchen, June Colquhoun has whipped up a Valentine’s Day treat, perfect for spoiling your loved one. This recipe is ideal for a quiet night in with your other half, or for celebrating with family and friends.

Ingredients

You will need to get your hands on the following tasty ingredients.

  • 30g unsalted butter
  • 60g digestive biscuits
  • 100g full-fat soft cheese
  • 1/2 tsp vanilla extract
  • 1 tbsp icing sugar
  • 50ml double cream
  • 25g cocoa powder
  • Fresh strawberries
  • Nutella

Method

Follow the steps below to create this lovely cheesecake for two!

Melt the butter in the microwave in short bursts or in a small pan over a medium heat. In a food processor, blitz the biscuits to a fine crumb, add the melted butter and pulse a few times until the mixture is well
combined. Divide the biscuit mixture between two glosses and press the mixture down.

In a large bowl, whisk the soft cheese, vanilla extract and icing sugar until smooth. Add the double cream and cocoa powder and whisk again until smooth and thickened. Spoon the mix equally into the ramekins, and level carefully. Chill in the fridge for an hour or so until set. You can either leave the cheesecakes in the ramekins or decant.

Dollop a light layer of Nutella on the top of each cheesecake and place your fresh strawberries on top of this.
