Italian Sugo, Antony style.
This Italian dish is a family favourite in our household! I hope you enjoy it.
- 1 tin of tomatoes
- 1 clove of garlic
- Italian herbs
- Salt and pepper
- 4 eggs
- Chilli flakes
(Add whatever else you like that’s in the fridge I usually stick in chorizo, pancetta or bacon)
- Chop your garlic and fry in a deep frying pan. Add your meats or veg now and pan fry with the garlic.
- Pour in the tinned tomatoes.
- Add in all of the spices and seasoning.
- Bring to the boil.
- Crack your eggs on top and cover the pan.
- Poaching the eggs
Serve with some crusty bread or toast and I like to add some mushrooms on top too, just to get the extra veggies in. You can serve up family-style in a large pan or bake in individual baking dishes.
