Antony’s Italian Baked Eggs

Italian Sugo, Antony style.

This Italian dish is a family favourite in our household! Source the perfect ingredients listed below and follow the simple instructions to serve up this incredible Italian Sugo to your nearest and dearest.

I hope you enjoy it.


  • 1 tin of tomatoes
  • 1 clove of garlic
  • Italian herbs
  • Salt and pepper
  • 4 eggs
  • Chilli flakes

(Don’t be afraid to add whatever else you like that’s in the fridge – I usually stick in chorizo, pancetta or bacon)


  • Chop your garlic and fry in a deep frying pan. Add your meats or veg now and pan fry with the garlic.
  • Pour in the tinned tomatoes.
  • Add in all of the spices and seasoning.
  • Bring to the boil.
  • Crack your eggs on top and cover the pan.
  • Poaching the eggs

Serving Suggestions:

Serve with some crusty bread or toast and I like to add some mushrooms on top too, just to get the extra veggies in. You can serve up family-style in a large pan or bake in individual baking dishes.
