June’s New Lemon Drizzle Loaf

Before summer officially ends, take the time to try this delicious Lemon Drizzle Loaf recipe courtesy of our very own baking expert June Colquhoun.


– 250g unsalted butter
– 250g caster sugar
– 250g self raising flour
– 5 medium eggs
– Zest of 2 lemons (2tsp lemon extract)
– 75ml lemon juice

– 75ml lemon juice
– 75g caster sugar
– 50g icing sugar
– 1-2 tsps of lemon juice
– Lemon zest


1. Preheat oven to 180 degrees celsius and grease your 2lb loaf tin.
2. Mix your butter and sugar together until they form a creamy mixture.
3. Add flour, eggs, and lemon before beating again until smooth.
4. Pour your mixture into the cake tin and bake for approximately 60 minutes. Make sure to check on your loaf from 50 minutes onwards.
5. When your loaf is almost ready, mix together your lemon juice and caster sugar in a bowl.
6. After removing from the oven, drizzle this mixture over your loaf whilst still in the tin and let it cool.
7. Remove from tin once cool and decorate with lemon juice and icing sugar mixture.
8. Enjoy!
